5 Thyroid Healing Recipes

Why do we need specific thyroid healing recipes? For our thyroid pathway to run smoothly we need certain nutrients such as Vitamin C, Vitamin B2, Selenium, Iodine and Tyrosine. But equally so, we need to make sure we are avoiding the things that are damaging to our thyroid, causing more inflammation and therefore havoc to our bodies and thyroid.

The following thyroid healing recipes have taken all of this into account. They are all from the Thyroid Jar Food cookbook if you are looking for more recipes or the specifics around the choice of ingredients in each recipe.

The reason they are in jars is simply to help me stay organised and on track with my busy life. If I have jars of food that are good for my thyroid in both the refrigerator and freezer I am less likely to eat junky food that leaves me feeling horrible.

Bone Broth

1 whole organic chicken * 1 tablespoon Sea Salt * 6 Peppercorns * 2 Bay Leaves * 1 Onion Chopped * 1/4 cup Apple Cider Vinegar
Place all ingredients in a large stock pot with enough filtered water to cover the chicken. Bring to the boil and then lower the heat to simmer on the lowest setting for a minimum of 2 hours but preferably 12 hours.  Remove the chicken from the broth, set aside and shred for another purpose. Strain the broth and then pour into jars and freeze or refrigerate. It is handy to have both single jars as well as ice cube trays of broth in the freezer.

 

Coriander Pesto

3 bunches Coriander (cilantro) * 4 cloves garlic * 1 cup pinenuts * 1/2 cup sesame seeds * 1-2 cups oil of choice
Put all ingredients in a food processor and whizz until finely chopped. Slowly drizzle your choice of oil (I like grape seed as it has no flavour) until the pesto is of a thick consistency. This will keep in the fridge for about five days.

 

Lasagne

250g grass fed beef mince * 1/2 cup organic tomato passata * 1 tablespoon GF Worcestershire sauce * 1 tablespoon GF Sweet Chilli Sauce * Salt & Pepper * 1 zucchini sliced thinly * 1 quantity of raw sour cream.
In a heavy based pan saute the meat until cooked through. Add the tomato passata, sauces and seasoning to taste. Set aside. On a griddle pan place the slices of zucchini in a single layer and cook until softened on both sides. Layer a couple of tablespoons of meat, 3 slices of zucchini and a tablespoon of sour cream alternately to fill each jar.  Makes 3-4 jars and freezes very well.

 

Raw Sour Cream

1 cup raw macadamia nuts * 1/2 cup water * 1/4 cup no flavour oil like grapeseed * 2 tablespoons Apple Cider Vinegar * 1 teaspoon onion powder * 1 teaspoon herb salt.
Place all ingredients in a high speed blender for best results and blend until smooth and creamy. Stores in the refrigerator for 1 week.

 

Mocha Mousse

1.5 cups Macadamia Nuts * 3 pitted Medjool Dates * 2 teaspoons vanilla * 2 tablespoons raw cacao * 1 tablespoon decaffeinated coffee * 250ml Coconut Cream
Put all ingredients in a high-speed blender and blitz until smooth and creamy. Keep in the refrigerator for up to 1 week or keep in the freezer for an ice-cream alternative. You will just need to get it out prior to eating dinner to give it time to soften a little.
